Easiest, tastiest veggie chicken stir fry EVER

Can I just start this post out by saying OMG. The dinner I made tonight was, no joke, probably one of the best, if not THE best dish I've stumbled upon so far. Seriously. I don't know if it was because it tasted so good or because it was RIDICULOUSLY easy to make. Either way, I just want to preach to y'all the gloriousness (is that a word?) of utilizing herbs & spices! They are secret flavor magicians that I don't think I have utilized enough in the past. Tonight's dinner was delicious and I couldn't wait to get home from the gym tonight so I could share it with you!

So like I have told you guys before, eating healthy is NOT difficult. You just gotta know how to do it right. Well tonight I wanted to use the chicken breast that I had, but I didn't have time to marinate it with anything. So I opened my cabinet and pulled out every jar of spices/seasonings/herbs I had. Let me repeat to you that NONE of these have salt in them. Actually they all have almost no sodium in them. When you are at the store, make sure to look at the label before throwing it in your basket! Some of them have salt as the primary ingredient, which may taste good, but isn't the best for you. So the spices I had in my cabinet tonight were ground cumin, chili powder, Southwest Chipotle Mrs. Dash and garlic powder. I mean, nothing super fancy. I like to make chili a lot, so that's why I have the cumin and chili powder, Mrs. Dash is just the best ever, and we ALL know about my obsession with anything garlic. So what I did is not rocket science: I sprinkled a thin layer of all these spices over my chicken breasts. SO impressive right?? Not really. It took me like 2 minutes because I'm a perfectionist and wanted them all to look even. After that, I threw them on the George Forman and let it do its thing. If you don't have one of these, I highly suggest investing in one because they are like a miracle from God, no kidding.

So while the chicken was cooking, I pulled out a bunch of veggies to stir fry up in a pan. I wanted some variety and had some extra time tonight so I used asparagus, broccoli, snap peas, onions, red bell pepper, and of course, some minced garlic. I cooked that up with some Pam while the chicken finished up. Really simple. I started drooling in my kitchen when I opened up the George Forman. First because it smelled DELISH. And second because it just looked beautiful. I was pretty pleased with myself, I do have to say.

How bomb does that look right?? Trust me, it tasted just as good. And it was literally some cut up chicken breasts and seasonings! So I measured out about 5 oz of chicken, cut it up and added it in to my vegetables. I sprinkled in a few more spices and let it cook for another minute and the end product was just glorious. I'm telling you guys, I've never really used this many spices in a dish before but I am going to go to Albertson's right now and buy every freakin' herb and spice they have because this was so flavorful and delicious! A lot of people think that just because it doesn't have some yummy sauce on it or something that it can't taste good. WRONG. Utilize your spice rack! Seriously! I was amazed by how good this tasted and it was stupidly easy to make.

I mean, there you have it guys. I have officially proved tonight that it is possible to eat delicious AND healthy. How many times have you eaten fast food or something seriously cheesy, greasy, fatty and you are just in love with your life while you're eating it, but then feel disgusting afterwards? Not only does your digestive system hate you, but you probably feel guilty knowing that you just consumed God knows what, and that its NOT good for you? I used to feel like that every day. But I listened to the initial "OMG this food is bomb" feeling rather than the "Wow, I probably just consumed so many bad things" feeling. Make the switch! Listen to the other feeling! because let me tell you something...it is POSSIBLE to still get that "OMG this food is bomb" feeling WITHOUT the guilty feeling! I was so satisfied with this food tonight, but it made me feel even better knowing that what I ate was literally chicken breast, vegetables, seasoning and a little oil. I mean, you can't really beat that. I know it's hard to stop ignoring the guilty feeling, but listen to it because it is there for a reason. You feel guilty because you just consumed something that is not good for your body. Start taking a little extra time in your day, and you can still get the best of both worlds, I promise you! Cue Hannah Montana music, please....
