Crockpot Chicken Tacos

So I am ALWAYS on the hunt for simple, easy, healthy recipes. Especially if those recipes involve tacos of any kind. When I came across this recipe on Pinterest for crockpot chicken tacos, I almost thought it was TOO simple....how can this taste good with 3 ingredients?? But I was willing to give it a try and OMG!!!! This has quickly become a staple in the Luckenbach house. Both hubby and I love these tacos, and we will seriously make this multiple times a month because it doesn't get old!! I don't have EXACT measurements, but I don't think you need them for this recipe! Give this a try and let me know how you and your family like them!!


Crockpot Chicken Tacos
Ingredients:
1-2 lbs raw chicken breasts
1 jar of green salsa verde
1 lime
Toppings: cheese, avocado/guacamole, pico de gallo, lettuce, nonfat plain greek yogurt - whatever you like!
Directions:
Spray your crockpot with cooking spray. Place the chicken breasts in crockpot. Cover chicken breasts with just enough salsa to cover completely. Add 1 tbsp of lime juice. Cook in crockpot for about 4-6 hours on low. Check that chicken is cooked all the way through, then remove chicken breasts from crockpot. Shred chicken in a bowl, then return to crockpot. Add another tbsp of lime juice and a little extra salsa verde if your chicken is dry at all (mine usually isn't but if it is, a little more salsa will do the trick!) Warm the chicken through for about 10-15 more min.
Add chicken to corn tortillas or lettuce wraps. Add your favorite toppings and ENJOY!
