Hey guys! So I haven't done a dessert post in forevs, for some reason I have been posting a lot of chicken fajitas. BUT today, that is not the case, my friends! Prepare to have your minds blown away with one of the quickest and easiest and YUMMIEST desserts you will ever make. I know, those are big words I'm throwing around, but I stand by them.
I was driving home from work yesterday and for some reason, my sweet tooth was aching. I don't post too many dessert recipes because I'm not a huge sweets person. I know, blasphemy right?? But it's true...I just don't ever crave sweets a lot. But yesterday was a different story. I wanted something delcious and CHOCOLATEY. So I did a little searching and found this awesome recipe for a healthy chocolate mug cake! I have never made a mug cake before, but have heard about them and knew they were easy.
Now, when it comes to me, I will sacrifice your "typical" full fat flavors and such in order for my food to be healthier. What I mean is that, I will make desserts and meals that are much lower in fat, calories and sugar, and some people can tell the difference in taste. But for me, as long as it doesn't taste like sandpaper, then I am okay with this. Another example is the tofu shirataki noodles I have used in recipes before. These don't taste like spaghetti, the texture is not that of spaghetti. But for me, it is worth having such a low carb/calorie alternative, so I will deal. That being said, I had my mom try this out, who is VERY sensitive to these kind of changes, and she said it was okay. Not my ideal response, but if you asked me, this tasted like one of those delicious molten lava cakes you get for dessert at restaurants. It had a gooey center which was great, a rich chocolate taste, and had the texture of cake.Taste, Texture, Gooeyness. I really don't see any issues here, do you guys? Nope didn't think so. Next time you are craving something chocolatey, I would suggest trying this dessert out. It's a great alternative to that piece of chocolate cake or brownie you were eyeing at the grocery store. Try this out and let me know what you think!
Healthy Chocolate Mug Cake
makes 1 serving
Ingredients:
- 3 tbsp of ground oats - I didn't feel like doing this last night, so I just used whole wheat flour, but I'm pretty sure you could use any kind of flour here
- 3/4 tsp baking powder
- 1 1/2 tbsp unsweetened cocoa powder
- 1 tbsp nonfat plain Greek yogurt
- 1/2 tbsp vanilla extract
- 1 tbsp honey
- 3 tbsp unsweetened vanilla almond milk
- 1 square dark chocolate - I didn't have this but I did have Ghiradelli 60% cacao dark chocolate chips, so I used about 10 of those

Directions:
In a bowl, mix together everything but the dark chocolate. Make sure everything is well combined.

Pour half of the mixture into a microwave safe mug. Top with chocolate chips and pour the rest of the batter on top.
Put the mug in the microwave for 1 minute and 30 seconds. Be careful, the mug will be hot!

Chocolatey heaven. Enjoy!
