Spicy Cinnamon Sweet Potato Fries

Happy Monday fit friends! I wanted to share with you guys what I did last night and a major (not so) secret weapon to how I stay on track with eating healthy. As most of you know, I work a 9-5 job in Seattle Monday through Friday. Our office is surrounded by food trucks and great restaurants, and though a lot of people here in the office eat out everyday, I find that it is just not a good option for me. Why? 1) It costs hella money. 2) You never REALLY know how other people are cooking your food. 3) It costs hella money! Ha, but for real, prepping my meals ahead of time is SO important for me to stay on track. You can either cook the same thing for the 5 days you will be working, or you can cook multiple! I personally am okay eating the same thing for a week, as long as I switch it up for the next week.

A lot of people think that meal prepping is really difficult, but its not! It's just a little time consuming. Here are my steps for meal prepping:

  1. Saturday - decide what I want to eat for the week. I tend to follow the same formula each week - I usually just pick one protein (chicken, turkey, lean beef, etc.), veggie (usually roasted or a salad), and complex carb (sweet potatoes, quinoa, brown rice, etc.).

  2. After I figure out what I want, Sunday is grocery day! Get enough of each of your ingredients for 5 days.

  3. Sunday night: cook it ALL up. This week, I chopped up my broccoli, grilled my chicken and baked my sweet potatoes. When it was all done, pack them all into Tupperware and HELLO! You are a meal prep master.

So what did I do for my meal prep this week? Well I made the delicious Dijon chicken that I posted previously. It is just so simple and downright delish. I made a side of roasted broccoli, which is a staple in my life. Literally just chop up some broccoli, toss with a little EVOO, pepper and Himalayan salt. Roast for about 15-20 at 375 degrees. Dunzo. The last part of my meals this week was DEFINITELY my favorite. I decided to try out a new recipe, and it was SO YUMMY. It sounded a little odd, but good at the same time. I am so glad I decided to try this because the flavor combination works great! Below is the recipe for Spicy Cinnamon Sweet Potato Fries. Try these next time you are feeling adventurous and want a little kick to your meals.

Spicy Cinnamon Sweet Potato Fries

Ingredients:

- 2-3 medium sweet potatoes

- 1-2 tbsp. coconut oil

- 1/2 tbsp. cinnamon

- 1 tsp cayenne pepper

* Egg whites for crispy fries

Directions:

Preheat oven to 375. Cut sweet potatoes into fries. Toss in a mixing bowl with coconut oil, cayenne and cinnamon until all fries are evenly coated.

*Extra tip: I didn't do this to mine because I forgot, but coating the fries in egg whites helps to make them crispy! I would just pour some liquid egg whites into a bowl, use a basting brush or paper towel, coat the fries in egg whites. I haven't tried this method before, but will definitely do it next time I make these!

Arrange on a foil-lined baking sheet in a single even layer. Bake for 30-45 minutes, being sure to flip fries halfway through. I made a HUGE batch, so mine took about an hour to cook. Just be sure to check on them and use your best judgement! And that is it - delicious spicy sweet potato fries that even your picky ass boyfriend would love.
