Spicy Thai Shrimp Stirfry

Hi friends! So I wanted to share one of my favorite, easy clean eating recipes. I got this recipe from the Busy Girls Eat Clean Instagram account. It doesn't take much prep time or ingredients, which makes it super easy to whip up quickly when you don't want to spend a lot of time on dinner! I don't know about you, but I love spicy Thai food! This is such a great healthy version...I honestly feel like I'm eating unhealthy Thai takeout. Try this one out next time you're looking for something spicy and easy!!

Spicy Thai Shrimp Stirfry

Ingredients:

- 4 oz cooked shrimp

- 1/4 red bell pepper, sliced

- 1/4 green bell pepper, sliced

- 1/4 onion, sliced

- 1 tbsp Braggs liquid aminos

- 1 tbsp rice vinegar

- 1/2 tbsp PB2

- 1/2 tbsp Sriracha

- 1 tsp coconut oil

Directions:

Slice up your bell pepper and onion and cook on medium heat in a pan with coconut oil.

While the veggies are cooking, mix liquid aminos, vinegar, PB2 and Sriracha in a small bowl.

Once veggies are almost fully cooked, add shrimp and cook for about 1-2 minutes.

If you are doing the 21 Day Fix, use your red container to measure your shrimp!

Once the shrimp has cooked for about 2 minutes, add the sauce and continue cooking another minute or so.

Serve up right away and enjoy!
