Chicken Apple Sausage Sweet Potato Hash

Sooo, confession time! Last weekend was bad for me. Damn you Mariners games! I gave in to the garlic fries last Saturday night, and on the way home, stopped for nachos with my fiancé. Then Sunday morning, just kept the unhealthy times rolling by getting a smoked salmon and cream cheese omelette with home fries. UGH! Bad bad weekend. I looked on the scale Monday and was seriously pissed - up 5 lbs. But it wasn't surprising! I knew what I did and why that number was high. That weekend was a great reminder to why I need to always be thinking about moderation as I work through this journey. I don't have to be on point 100% of the time. But two days of unhealthy greasy food is going to mean bad news bears. So I made a vow that this weekend would be better! I did my meal prep and this entire week has been great. The weekend is ALWAYS the hardest for me, but I am using last weekend as motivation to stay on track. I am down 2 lbs from the 5 I gained so far and plan to knock the rest out this week! This morning, I woke up and decided I wanted a great hearty healthy breakfast. I luckily had all of these ingredients laying around and it was so easy - just throw them in a pan and you are good to go! That is pretty much what I do with most of my meals. But if you are looking for a yummy breakfast recipe to try out, this combo is DIVINE. Try this out next time you want a delicious healthy breakfast that fills you up! I used my 21 Day Fix containers to portion everything out, so that is what I have for my measurements. If you haven't heard of the 21 Day Fix, you are missing out. It is all about portion control and moderation, so I didn't have to guess about how much of each ingredient to have. I just fill my container and I'm good to go! I honestly loved this and can't wait to try it out again!

Chicken Apple Sausage Sweet Potato Hash

Ingredients:

- 2 cage-free eggs

- Chicken sausage, cooked

- Zucchini, chopped

- Red bell pepper, chopped

- Red onion, chopped

- Sweet potato, cubed and cooked

- 1 green apple, chopped

- 1 tsp coconut oil

Directions:

Using your 21 Day Fix containers, measure out 1 green of red onion, zucchini and bell pepper, 1 yellow of sweet potato, 1 purple of green apple and 1 red of chicken sausage. If you aren't using the containers, you can measure about 1 1/4 cup of the veggies, 1/3 cup sweet potato, 1/2 cup green apple, 4 oz of chicken sausage. These are NOT the same measurements as the Fix containers, but are the best guess I can give to how much you can use. I highly recommend using the Fix containers if possible though because then you don't have to guess out your portions! Add the apples and veggies (except the zucchini) to a pan with coconut oil and cook on medium until almost fully cooked, 5-7 minutes.

As veggies are cooking, spray a pan with olive oil spray and cook your eggs to desired runny-ness (is that a word?). I like mine over easy. I topped mine with some Flavor God Lemon Garlic seasoning as well.

Once veggies are almost cooked, add the sweet potato, zucchini and sausage and cook for an additional 3-4 minutes until everything is cooked through. I added some Flavor God everything seasoning to this as well!

Once everything is cooked, remove from stove and top with your eggs. And that's it - DIG IN!
