Chicken Cauliflower Fried "Rice"

So I have seen a TON of recipes using cauliflower instead of rice. It has always been on my to-try list but I just haven't gotten around to it. Until tonight that is! I was craving something unhealthy and my fiancé mentioned going to Panda Express on his way home from dinner - YUM. I decided to go with a better alternative and try out cauliflower fried rice! I added some chicken to give it a little protein boost and honestly? I dunno if I ever need to eat real rice again. This was super easy to make and SO good! I had Devin try it and let me preface this by saying he does not like healthy food usually, so I have to trick him into eating good stuff (shhhh, don't tell him!) He thought it was awesome too! I love that we both like it because that makes it easier on me in the kitchen when I don't have to make separate dinners. So I definitely recommend trying this out instead of your regular fried rice. You won't be disappointed! And I will be trying out lots of cauliflower recipes too so keep an eye out!!
Chicken Cauliflower Fried "Rice"
makes 4 servings

Ingredients:
- 1 medium head (about 24 oz) cauliflower, rinsed
- 3 chicken breasts
- garlic powder
- 1 tbsp sesame oil
- 2 egg whites
- 1 large egg
- pinch of salt
- cooking spray
- 2 tsps olive oil
- 1/2 small onion, diced fine
- 1/2 cup frozen peas and carrots
- 2 garlic cloves, minced
- 5 scallions, diced, whites and greens separated
- 3 tbsp - 1/4 cup of Bragg's Liquid Aminos
Directions: Cut chicken breast into 1/2'' chunks. Add about 2 tsps of olive oil to pan. On medium heat, add chicken breast and garlic powder and sauté until fully cooked. Set aside.

Chop onions. Let the cauliflower dry completely and remove core. Chop cauliflower into florets, then place part of the cauliflower in a food processor. Pulse until the cauliflower has the same texture of rice or couscous – don't pulse or chop too much or it will get mushy. Repeat with remaining cauliflower and place aside.


Beat egg and egg white together in a bowl with a pinch of salt. Heat pan on medium and add cooking spray. Scramble eggs, then place aside in a bowl.

Add sesame oil, onion, peas, carrots, scallion whites and garlic to pan. Cook on medium until soft - about 3-4 minutes.

Raise heat to medium-high and add the cauliflower rice to the pan. Add liquid aminos, stir, cover and cook for about 5-6 minutes, stirring frequently. You want the cauliflower rice to get a little crispy on the outside, but tender on the inside. Add the scallion greens, chicken and eggs, then remove from heat. Enjoy!
