Buffalo Cauliflower Bites

Okay, its football season which means unhealthy food season right? WRONG. My favorite thing to do is take my favorite unhealthy dishes and find a health alternative. It satisfies the craving but keeps you on track with your goals! Tonight was Monday Night Football, so I decided to try out these Buffalo Cauliflower Bites! I was SO impressed with how they turned out - no need for this girl to indulge in the unhealthy wings anymore! They were pretty simple to make, were moist in the middle but had a crispy crust! And the buffalo sauce totally tricked me into thinking I was eating wings! You guys just have to try these out - they are gonna be a staple in this house now!!
Buffalo Cauliflower Bites
Adapted from The Clean Eating Machine
Ingredients:
1 head of cauliflower, chopped into bite size pieces
1/2 cup brown rice flour (I used whole wheat because thats what I had!)
1/2 - 3/4 cup water
Pinch of salt
Pinch of garlic powder
Non-stick spray
1 tsp olive oil
1/2 cup Frank's Red Hot Sauce
Directions:
Preheat oven to 450F.
In a small bowl, combine flour, water, garlic powder and salt. Mix thoroughly with a whisk. I added a little more water than 1/2 cup until my batter was a little smoother and a little thinner than pancake batter.
Dip cauliflower pieces in the batter until coated evenly, then place on a lightly greased, non-stick baking sheet.
Bake for about 10 minutes or until the batter hardens, then flip with a spatula and bake for another 8 minutes.
Whisk together Frank’s Red Hot sauce and olive oil in a small bowl.
When the cauliflower is finished, add them to a large mixing bowl and pour the sauce on top, stirring well with a spoon until all of the pieces are evenly coated.
Bake coated cauliflower for an additional 10-12 minutes, or until cauliflower is crispy, and sauce looks absorbed.
Remove from oven.
Let cauliflower bites cool.
