I've been sharing all about this stuff for awhile and promising I would blog the recipe, and I'm FINALLY getting around to it because I get asked about it almost daily!! Its because this has become one of my staples in my meal plan and since I share it so much, I want to give you all the recipe so you can try this deliciousness for yourself! Its my homemade turkey sausage and its super easy to make as well as very flavorful!
Now let me start by saying that this isn't my creation - I actually got this recipe from the healthy cooking show that is part of my online streaming fitness library called Beachbody On Demand! This cooking show has SO many yummy, healthy recipes that I've tried and its like a combo of clean eating + Food Network...YES please! I had to share that because if you like this turkey sausage, you will most likely love all the other recipes on the show as well! Okay - on to the recipe!! Lots of flavor, very easy to meal prep, and has multiple uses. Because it is a breakfast sausage, it does have a little sweetness to it from the maple syrup, but you can still use this however you want! I've thrown it in with some brown rice pasta, veggies and marinara to make a hearty, sweet meat sauce! Normally, I just eat it on its own with steel cut oatmeal, fruit or even some roasted butternut squash for breakfast. But I'll be real, I find myself opening up my stash and just eating this randomly throughout the day straight from the fridge because YES, its just THAT good. I usually ALWAYS make at least a double batch - sometimes a triple batch to last me the whole week. Time to judge for yourself!! Try out my healthy turkey sausage and let me know what you think!!
Healthy Turkey Breakfast Sausage
adapted from Fixate
INGREDIENTS:
1 lb. raw 93% lean ground turkey
2 Tbsp. pure maple syrup
1½ tsp. sea salt (or Himalayan salt)
1 tsp. finely chopped fresh sage
1 tsp. finely chopped fresh rosemary
¼ tsp. ground black pepper
1 dash ground juniper berries (if you can't find you can just omit this)
¼ tsp. ground nutmeg
2 tsp. ice cold water
1 tsp. olive oil
DIRECTIONS:
Combine turkey, maple syrup, salt, sage, rosemary, pepper, juniper, nutmeg, and water in a large mixing bowl; mix with clean hands until just blended. (Do not overmix, as that will make the sausage tough.) Set aside.
Heat oil in large nonstick skillet over medium-high heat.
Add turkey mixture; cook, stirring frequently to break turkey into crumble-sized pieces, for 5 to 8 minutes, or until turkey is no longer pink.
RECIPE NOTES:
If possible, use dark amber maple syrup, which can be found at upscale markets or online.
If you can’t find juniper berries at your local store, check online.
This sausage can also be sautéed in patties. Store cooked sausage in an airtight container in the refrigerator for up to 5 days.
Sausage can be held raw in an airtight container in the refrigerator for 3 days, or in the freezer for up to 3 months.
